Low Carb Chocolate Peanut Butter Protein Bar
These are protein bars that are low in carbs and high in protein and healthy fats. I think they actually taste a lot better than some of the oat and oat flour type bars.
Ingredients Chocolate Whey powder Nut meal - nuts ground into a fine powder peanut butter eggs splenda The amounts of everything will vary depending on your current diet, but a rule of thumb is one scoop of protein per bar, and one bar for every 25-30 square inches of pan space you have. For example, I use 6 scoops of protein to make 6 bars in a 9x9 inch pan. Use an electric mixer if you have one, this is a pretty thick mixture. Add the eggs and peanut butter first, and then gradually add in the whey, nut meal, and splenda. You should add enough of the fatty ingredients that you end up with a gooey mix, but you can adjust the specifics based on your diet. If you need more wet ingredient but don't want to add more fat, add some egg whites instead of more eggs. Add the mixture to a greased pan, level out, and cook at 350 degrees for 10-12 minutes. Monitor the bars closely to make sure they are not getting too dry. I like the middle to be a little underdone. Most bars will have 25-35 grams of protein, depending on how much egg and egg white you added, and how much protein your powder has. |
