    Crock Pot Recipes?

    Does anyone have healthy crock pot recipes? or recipes that pack a major protein PUNCH

    Chicken & Sweet Potato Stew

    Ingredients


    6 Chicken Breasts, skin removed, trimmed of fat
    2 pounds sweet potatoes, peeled and cut into spears
    1/2 pound white button mushrooms, thinly sliced
    6 large shallots, peeled and halved
    4 cloves garlic, peeled
    1 cup dry white wine
    2 teaspoons chopped fresh rosemary, or 1/2 teaspoon dried rosemary, crushed
    1 teaspoon salt
    1/2 teaspoon freshly ground pepper
    1 1/2 tablespoons white-wine vinegar

    Preparation


    Place chicken, sweet potatoes, mushrooms, shallots, garlic, wine, rosemary, salt and pepper in a 6-quart slow cooker; stir to combine. Put the lid on and cook on low until the potatoes are tender, about 5 hours.

    CROCK POT CHICKEN BREASTS

    3 lg. boneless, skinless chicken breasts
    1 (10 3/4 oz.) can cream of mushroom soup
    1 large onion, chopped
    3 cloves garlic, minced
    1 (4 oz.) can mushrooms
    1/2 c. chicken broth
    1/4 c. white wine
    Salt and pepper

    Layer chicken breasts in bottom of pot. Add salt a pepper as desired

    Put the soup, broth and wine over the chicken

    Bring to a rapid boil and pour over chicken (crock pot on high).

    Add garlic and onions, and mushrooms

    Set Crock-Pot on high for 30 minutes; reduce heat to low and cook for 7 to 9 hours.

    Serve it over rice or pasta is you want.

    Makes two servings.

    Pretty easy.

    Good timing! I am actually cooking turkey meatballs in the crock pot today. This recipe sounds killer, I gotta try it, thanks.

    No problem. It would probably work well with any kind of meat. I've actually made this with some lean pork cuts.

    Crock Pot Chicken Chili

    •1 pound chicken breast halves or tenders
    •6 cups water (adjust for desired thickness)
    •2 cans (approx. 14.5 oz. each) chicken broth
    •2 cans (8 oz. each) cans tomato sauce
    •1 onion, diced
    •1 cup yellow corn
    •1 celery stalk, diced
    •1 can (14.5 ounces) can diced tomatoes
    •1 15-ounce can red kidney beans
    •1 jar (4 ounces) diced pimento, drained
    •1 jalapeno, diced (optional) Too spicy for me!
    •1 teaspoons chili powder
    •1 clove garlic, minced (or 1 tsp minced from a jar)
    •1/2 teaspoon salt

    Place chicken in crock pot. Mix together all other ingredients and pour over chicken. Cook on LOW 7-8 hours. Shred chicken before serving
