¾ lb sm. White mushrooms,, brushed clean
2/3 c dry red woine
¼ c red wine vinegar
1/8 tsp gr. Allspice
4 cardamom pods, crushed
2 whole cloves
1 bay leaf
¼ tsp whole black pepperconrs
1 tsp granulated sugar
½ tsp sea salt
1/3 c extra virgin olive oil
Makes 4 servings
Clean the mushrooms by gently brushing the with a soft brush or damp kitchen towel. You will only want to loosen the remove any dirt or grit. Rinse the brush in cool water after each mushrooms is cleaned. Cut off the stem flush with the bottom of each mushroom cap. Place the mushrooms in a saucepan. Add the wine , vinegar, allspice, cardamom, cloves bay leaf, peppercorns, sugar, salt, and olive oil. Pour in ½ c water. Bring to a boil over medium-high heat, reduce the heat to med-low and simmer until a knife easily pierces the centre of a mushroom cap, about 10 minutes. Remove from the heat and let the mushrooms, cool completely in the cooking liquid.
To serve, using a slotted spoon, transfer the mushrooms to a serving bowl.
