    OMG Greek Eggs!

    Today...looking in the frig..I found some greek olives, feta, eggs, a tomato, and some red onion.

    So I dice and saute the onion (1/3) with the tomato (diced also) in Safflower (should have used olive), with a touch of cayenne peper......while I crack the eggs, diced the cheese and pit and slice the olives.

    OMG! :yummy:

    ......the split wasn't fair.....we used 10 eggs (4 Whole plus 6 Whites) and Mrs. Pain took more then her usual share!

    Now, I'm actually hungry AS I'm eating it!

    I just made a version of Greek omelette the other day too....spinach, feta, 1 yolk, 5 whites, onion.....when done, sprinkle with 1 T. shredded parmesan!!!

    ....hmmmm...I have spinach, onions, parmesan.....tomatos and olives....

    breakfast eggs are going to be different and good in the morning
