    Chicken Patties

    600 gr of chicken mince
    2 eggs, lightly beaten
    2 tbs of olive oil
    4 tbs of stale, dry breadcrumbs
    a little dried oregano
    salt
    freshly ground pepper

    Knead the minced chicken with the breadcrumbs and the eggs. Add the herbs and the salt. Knead a little more then place in the fridge to firm a little. Remove and form into patties, about 5-6 cm in diameter. Fry in a non-stick pan, without oil or butter. Cook on both sides.

    Serve the patties hot. The addition of egg is necessary for chicken mince in order to bind it since chicken is low in fat.

    OOOHHHH this sound really good, I would skip the bread crumbs though.

    how you mince the chicken? the picture looks so good yum!!!!!

    Ok, chicken breasts or chicken leg fillets are very tender so you just cut them into large cubes and grind them in the mixer until they turn into a mash (Hmm, maybe I can grind them less and put the mince in a scrumbled omelet). Just push down with a spoon if it sticks on the sides. About the bread crumbs, you need them to absorb the liquids and have a more binded pattie. You can substitute them with hard-tack if you like, or soak the stale bread in water and squeeze to drain (remove crust). I haven't tried removing the yolks, so there's another idea. You can also grill the patties instead of frying them, and shred some cheese on top to melt. You can be creative with the mixture, add chopped fresh onions, parsley, dill, thyme, mustard, cheese, cayen pepper, curry or anything that combines with chicken.
    Some feta cream would be nice on the side, I think I'll post a recipe on that soon.

    You could substitute Old fashioned oats for the bread crumbs...just process them in your food processor first
