Cream Cheese Cookies

Amount Measure Ingredient -- Preparation Method

3 ounces butter -- softened
4 ounces cream cheese
1 ounce wheat gluten
2 ounces Soy Protein Powder,Vanilla
1 ounce ground almonds
2 tablespoons Splenda sweetener
1/2 teaspoon vanilla
1/4 cup macadamia nuts -- chopped

-Mix the butter, cream cheese & Splenda & vanilla until creamy.
-Add the dry ingredients, mix well.
-Stir in the nuts.
-Lightly spray a baking sheet & make 12 mounds; bake for 15 to 20 minutes or until a light golden brown.
-Nutritional count per cookie{12}:2 carbs minus 0.2 grams fiber= 1.8 carbs.
-Nutritional count per cookie{14}:1.7 carbs minus 0.2 grams fiber=1.5 carbs.
-Nutrional count with no nuts per cookie{12}:1.8 carbs minus 0.2 grams fiber = 1.6 carbs

Pina Colada Squares

Amount Measure Ingredient -- Preparation Method

1/3 cup cold butter -- cubed
3/4 cup ground almonds
1/4 cup Atkins Bake Mix
1 tablespoon unsweetened coconut
2 tablespoons splenda
Topping
8 ounces light cream cheese -- softened
2 X-large eggs
3 tablespoons sour cream
1/2 cup splenda
1/4 teaspoon coconut extract
1 teaspoon pineapple extract
1/2 teaspoon vanilla -- see note*


-Preheat oven to 350*F
-Prepare crust:add dry ingredients to bowl; cut in the butter with a pastry blender or with your fingers till butter is incorporated.
-Spray an 11x7 or 9" square pan with cooking spray.{Spray the bottom very well}.
-Pat the crust mixture evenly on to the bottom of the pan, set aside.
-Prepare topping: put the cream cheese in a bowl & beat until fluffy.
-Add the eggs,splenda, sour cream & extracts, beat well.
-Pour onto the prepared crust & bake for25 to 35 minutes or until edges turn a light brown & filling is firm in the center.Do not overbake as it drys it out.
-Cool on a wire rack, chill, then cut into desired number of squares.
-12 squares @4.3 minus 0.8 gr. fiber= 3.5 carbs each & 5.3 gr. protein
-14 squares @3.7 minus 0.7 gr. fiber= 3 carbs each & 4.6 gr. protein
-* The flavorings could be adjusted to your own taste.It smells heavenly while it is baking!
-**I test at 25 minutes & then a couple of times in the remaining time.

Pudding Cookies

1 stick of butter
2 oz cream cheese
1 package any flavor SF pudding
1/2 tsp vanilla
1 cup soy protein powder
1 oz chopped nuts

Soften butter and cream cheese and mix well. Add pudding and stir until mixed. Stir in vanilla, soy protein powder and nuts. Roll into 1.5" diameter balls and carefully flatten. Bke at 350 for 10-12 minutes. Sprinkle with sugar sub if desired.

SESAMME PEANUT SNAPS

MIX cook- 350 degrees 10 minutes for a chewy cookie 14 minutes for crunchy
1 cup peanut butter
1 cup splenda
1 whole egg
1 tsp.vanilla
2 oz. sesamme seeds toasted (1/4 cup)
1 tsp.baking powder
1 tbsp.butter
1 tsp. salt ( half salt is good too)

drop by teaspoons on non stick bake ware or parchment paper also called cooking paper often available in bulk food stores if the surface is light coloured it will cook better than dark baking sheets if they are dark , reduce your cook time or lower oven heat so cookies dont scorch ( a really big waste of incredible cookies)

Almond Cookies

1 1/4 cup almond flour (or any nut flour)
1 cup Splenda
1 egg
1/2 tsp almond extract
1/4 cup softened butter

Mix all well and form into 24 small balls. Press flat on an ungreased cookie sheet. Decorate with an almond slice if you like. Bake at 350 for 8 min. These are "real" cookies and taste great! I'd serve them to non-WOR people!

Chocolate Cookies Low Carb

Amount Measure Ingredient -- Preparation Method

1/2 cup flax seed meal
2/3 cup soy protein powder
1/3 cup soy flour
3/4 cup Splenda
1/2 cup cocoa
2 teaspoons baking powder
1 1/4 cups soy milk
1 teaspoon vanilla
1 teaspoon chocolate extract

Whisk together dry ingredients. Stir in measuring cup remaining ingredients. Stir together to form a batter. Continue stirring until it bubbles and thickens.

Spoon 1 Tablespoon size mounds onto non-stick cookie sheet. Bake at 300 for 15 minutes or longer.

Inge, I use the soy milk, 'cos I like getting soy in my diet, but you could lower the carb count by using 1/2 cream and 1/2 water.

I get 2.9 carbs minus 1.2 fiber for 1.7 per cookie with the soy milk.
