Chicken Fajita
Thanks to club member Mark K. for submitting one of his favorite recipes. 2 boneless, skinless chicken breasts 1 1/2 teaspoon cumin 2 cloves garlic, minced 1 1/2 teaspoon paprika 1 1/2 teaspoon onion powder 1 1/2 teaspoon chili powder 1 small green bell pepper cut into strips 1 small red onion, quartered and separated 1 small zucchini, chopped 8 fat-free flour tortillas 8 ounces shredded lowfat cheddar cheese Spray a large nonstick skillet with cooking spray and heat over high heat. Slice each chicken breast into bite-sized pieces. Add chicken and seasoning ingredients to skillet and cook for 6-8 minutes, turning occasionally. Add vegetables and continue cooking until vegetables are crisp-tender and chicken is no longer pink in the center. Serve fajitas on heated tortillas topped with shredded cheese.
