    Creamy Low-Calorie Herb Dressing

    Yield: 2 Cups

    2 Green onions
    1/2 c Parsley leaves
    2 T Fresh dill or 1 tsp dried
    1 c Buttermilk
    1/2 c Low-fat cottage cheese
    1/2 c Low-fat plain yogurt
    1 t Dried oregano
    1/4 t Salt
    1/4 t Freshly ground black pepper

    Finely chop onions, parsley and fresh dill; set aside. In food processor or blender container, process buttermilk, cheese, yogurt, and seasonings until smooth. Remove and stir in onion and herb mixture. Pour into covered container and keep refrigerated for up to 1 week.

    Per Tablespoon:
    9 calories, 1g protein, 0.2g fat, 0.9g carbohydrate, 0.1g fibre, 49mg sodium, 32mg potassium, 21mg calcium, 0.1g iron
