    Cottage Cheese Meatloaf-Jodi's recipe

    Cottage Cheese Meatloaf

    1 c cottage cheese
    1 egg lightly beaten
    1/4 c tomato paste
    2 T. chopped onion
    1 T Spicy Mustard
    1/2 C Oats
    1 tsp. salt
    1/8 tsp. pepper
    1 lb lean ground beef or turkey or 1/2 beef 1/2 turkey
    1/3 c grated Parmesan cheese
    Spices of your choice

    In a bowl, combine the first eight ingredients. Add beef and mix well.
    Press into an ungreased 8 inch square baking pan. Bake at 350 for 20 minutes. Sprinkle with Parmesan cheese; bake 10-15 minutes longer or until
    meat is no longer pink. Drain; let stand 10 minutes before cutting.

    **I usually cook mine for around an hour. I think I use more than 1lb of meat-I just use a reg size pack. I also use a med sized onion, and various spices. This meatloaf is the best ever! You can really adjust the recipe to your tastes

    this recipe is like peanut butter used to be for me. i made one, loved it and vowed that i wasn't allowed to have it ever again.

    I use a loaf pan-like the type for making bread in, or a pan thats about 12X6, like a brownie pan but longer.

    hey jodi, you use low fat stuff for this recipe right? like low-fat cottage cheese and parmesan cheese? Sadly I can't get non-fat cheese here, low-fat if I am lucky .

    I make something similar but without cottage cheese and I fill the center with some oven roasted, skinned red peppers, it's great stuff!

    You could substitute lightly mashed silken tofu for the cottage cheese.

    Yes, really.

    For the Parmesan, if you can't get the low-fat (which in my opinion, tastes like sawdust anyway) use a good regular Parmesan (that is, fresh, real cheese, NOT the stuff from the can) and a bit less of it, three tablespoons or so.

    A few suggestions...

    The "loaf" is solid enough to not need a pan. If you like the crust, like me, form the loaf in the pan, then turn over onto a sheet pan with a lip. The sides will crust up better, and what fat is squeezed out in cooking will roll to the sides, not stay on top.

    Mixing in mushrooms and peppers (I like red) adds great texture and flavor. Also, I glazed min with a miz of low-carb ketchup mixed with a little cumin and garlic powder.

    I'm having the leftovers for lunch. Even my wife liked it!

    Here's one I fix for my boyfriend. He loves it anyway. Has some vegs in it.

    1 1/2 lbs. Lean Ground Beef (I use 96%)
    2 egg whites
    1/2 c. ketchup or tomato sauce
    2 T. Grated Parmesan (not the canned stuff)
    3/4c. chopped fresh spinach (you can use frozen in a pinch)
    3/4c. chopped fresh mushrooms
    1/2c. oatmeal
    1/4c. panko bread crumbs
    2t. garlic (or more if your a garlic fiend!)
    2T Worcestshire Sauce (optional)

    Bake at 350 for about an hour in a loaf pan. I spread ketchup on top.

    I did a variation...

    Extra lean ground turkey
    Cottage cheese
    *(I personally did a part-skim Ricotta and Farmer's cheese mix).*
    1 egg white
    chopped onions
    cumin
    salsa

    Mix it up, make a loaf, glaze with some more salsa, and then bake it at 350 for about 50 min. Yum.

    I usually skip the oats and tomato paste, use Friendship 1% whipped cottage cheese, and add spinach and salt-free lemon pepper. That's pretty tasty as well.

    I love adding chopped spinach.

    The ricotta sounds interesting - may have to give that a try!

    Did you have any trouble holding the loaf together without the oats?

    Whipped cottage cheese makes it nice and moist. The ricotta made it a little drier, but the salsa added some moisture and zip. No probs holding it all together.
