Jen's Bran Muffins!

    Cool Jen's Bran Muffins!

    Ingredients:

    1C. All Bran cereal
    3/4C. ww flour
    1/2C. splenda
    1 whole egg
    1 egg white
    1/2C. applesauce
    1C. skim milk
    1tsp. baking soda
    1/2tsp. cinnamon(optional)
    1 large apple -approx 2per/lb - chopped (optional)

    Instructions:

    -in a large bowl combine cereal, flour, splenda, cinnamon and baking soda.
    -in a small bowl stir together remaining ingredients.
    -add liquid and dry mixtures together (add chopped apple now if you choose to include it)
    -cover with plastic wrap and chill overnight (much better this way!)

    when ready to bake:
    -preheat oven to 375 degrees F.
    -spray 6 muffin cups with non-stick spray.
    -evenly spoon in batter
    -bake for 20-25minutes or until toothpick inserted comes out clean.
    Make 6 large muffins

    136 calories
    1.6g fat
    28.3g carbs
    6.3g fiber
    6.3g protein
