    Cool Tammy's Sweet Potato Protein Pancakes!

    Sweet Potato Protein Pancakes

    1 med. sweet potato
    3 egg whites
    1/2 tspn cinnamon
    1/2 tspn vanilla (without alcohol)
    2 tablespoons Quaker oatmeal
    2 scoops ANY 100% Whey protein

    Pierce sweet potato and wrap in a wet paper towel. Microwave on HIGH 5-8 minutes. Remove skin and mash with the remaining ingredients in a medium bowl. Mix well and pour onto a heated skillet. Cook 2-3 minutes over medium heat, turn and cook an additional 2-3 minutes. Serve with sugar-free syrup.

    Makes 3 pancakes.

    NG I made them and liked them cold! I think Tammy eats them that way too! she was the one that suggested it to me!

    K, I made these and they turned out horrible! The mix looked so good I wanted to eat it right away, but after cooking, they were dry, and tasted like dirt, dont know WHAT I did wrong :S

    does anyone know the nutritional info for 2 Tbs oats? i'm figuring out calories/macros for the recipe and 2 Tbs oats has me stumped

    These really are very good. If you make them right! I'm going to make some more tonight to use up my sweet potatoes before they go bad and to have for breakfast.


    I do eat them cold - they're very good heated up too though!

    Weird, I can get nutritional stats for sweet potato baby food, and nonsense like that but not for just a sweet potato!! Does anyone know them? Say for 100gm?
