    Breakfast Recipes

    BREAKFAST RICE CEREAL
    INGREDIENTS
    1½ cups water
    1/8 teaspoon salt
    1 cup quick-cooking brown rice
    1/3 cup mixed dried fruit bits
    ¾ cup skim milk
    2 to 3 tablespoons brown sugar
    Dash ground nutmeg


    DIRECTIONS
    In a 2-quart saucepan bring water and salt to boiling; add rice and dried fruit bits. Cover and simmer 12 to 14 minutes or till rice is tender and liquid is absorbed. Stir in milk and nutmeg. Heat through. Serve with brown sugar.

    Serves 4.

    Preparation Time: 8 min.
    Cooking Time: 14 min.

    yep! no brown sugar and maybe swtich the dried fruits with fresh fruits

    GRANOLA
    INGREDIENTS
    3 cups regular rolled oats
    1 cup shredded unpeeled apple
    ½ cup wheat germ
    ¼ cup honey
    ¼ cup water
    1 teaspoon ground cinnamon
    1 teaspoon vanilla or ½ teaspoon almond extract
    Nonstick spray coating


    DIRECTIONS
    In a large bowl combine oats, apple, and wheat germ; mix well. In a small saucepan stir together honey, water, and cinnamon. Heat to boiling; remove from heat. Stir in vanilla or almond extract. Pour over oat mixture; mix well.

    Spray a 15x10x1-inch baking pan with nonstick spray coating. Spread oat mixture evenly in pan. Bake in a 325° oven about 45 minutes or till golden brown, stirring occasionally. Spread onto foil to cool. Store in an airtight container in the refrigerator up to 2 weeks.

    Makes eight ½-cup servings.

    What is wheat germ? do we have to add it to the mixture to make the granola ?

    FRUITY OATMEAL
    INGREDIENTS
    2 cups water
    ¼ teaspoon salt
    1 cup rolled oats
    1 cup chopped peeled peaches
    or chopped apple
    ¼ cup raisins or snipped pitted whole dates
    1/8 teaspoon ground cinnamon
    ½ cup skim milk


    DIRECTIONS
    In a medium saucepan bring water and salt to boiling. Stir in oats, peaches or apple, raisins, and cinnamon. Reduce heat and simmer, uncovered, for 5 minutes, stirring occasionally. Remove from heat. Cover and let stand for 2 minutes.

    Divide oat mixture among 4 bowls. Pour 2 tablespoons milk over each serving.

    Makes 4 servings.

    Cooking Time: 5 min.
