    Turkey Lasagna

    I just made this tonight and it was soooooo good

    1 Package Spinach WW Lasagna Noodles
    1 lb. 99% FF Ground Turkey
    1 Jar Bertolli's Fire Roasted Tomato Sauce - (only has like 1G sugar per serving)
    Garlic
    Onion
    Mushrooms
    Basil
    Oregano
    Dried Parsley Flakes
    16 oz. FF Ricotta
    16 oz. FF Small Curd Cottage Cheese (or 1 or 2%)
    1/2 C. Parmesan Cheese
    1/2 C. Egg Beaters
    FF Shredded Mozzarella

    Cook the noodles as directed and then cool in cold water. Cook the ground turkey and rinse with hot water. Add back to the pan and add 1 Jar sauce, garlic, onion and mushrooms, basil, oregano and pepper to preference. Cover sauce and let simmer for a few mins. while you prepare cheese mixture.

    Combine FF Ricotta, Cottage Cheese, Parmesaen cheese, Crushed Parsley flakes and Egg Beaters. Stir together. Add oregano, basil, garlic powder, onion powder, pepper to taste.

    Lightly coat bottom of 9x13 pan with the sauce, place a layer of the Lasagna noodles, then cover with cheese mixture. Coat with a light layer of sauce then sprinkle FF mozzarella cheese over. Repeat layers until everything is gone.

    Cover with aluminimum foil, bake at 350 for 45 mins. Remove foil and bake for another 15 mins. Let cool for 15-20 mins. before serving.

    I have no clue what the macros are. I just ate it

    Geez....that does sound GREAT, Jodi. . . I wrote that recipe down.
    While I will use ground turkey in the skillet or on the grill, I've always been hesitant about baking it - for some reason I thought it might dry out easily or something.

    It sounds like yours turned out great - and that's one of those recipes where I happen to like every single thing on it.... Thanks!
