Low Carb Quiche
I LOVE LOVE LOVE quiche so I modified a regular high carb recipe and came up with this healthy alternative. It's not recommended if you're cutting, but can definitely be part of a healthy eating plan.
1 container (16 oz.) lowfat cottage cheese 1 package of frozen chopped spinach (thawed) 3/4 cup reduced fat cheddar cheese 1/2 red pepper (optional, but adds more nutrients and color) 5 whites 2 yolks 2 T. parmesan cheese 1 T. ground flax 1 T. whole grain bread crumbs Mix all ingredients until well blended. Spray 9 in. pie plate with Pam, pour ingredients in. Bake at 350 F for 45 min. or until center is set. Let cool before serving. Makes 4 - 6 servings. This is so good, I could eat if for weeks at a time. I've also made it with chopped broccoli in place of the spinach and it was great. |
