breakfast bread/muffins
I got bored of my normal breakfast: 3 eggwhites, 1 whole egg, 1/3 c oats, 3 oz meat so I started making this bread (or muffin) recipe that I found on the Beverly site. They work great especially when I have to split my breakfast in half. (I usually eat 6 eggwhites on the side instead of the meat).
Mix together with wire whisk: 1/3 c oats 4 eggwhites, 1 yolk stevia to taste 1/2 tsp baking soda optional stuff: extract of choice, cinnamon, cocoa powder Spray mini bread pan or muffin tin (makes about 3 muffins) with no stick spray Bake at 350 for 30 minutes or until top is crispy and toothpick comes out clean.
