Pumpkin Loaf
Pumpkin Loaf (mini)
1/2 c. canned pumpkin 2 T water 1/2 tsp vanilla extract 1/3 c. Casein Whey 1/4 c. egg substitute 6 pkts Sugar Substitute 1/2 tsp baking soda 1 tsp pumpkin pie spice or (1/2 tsp cinnamon + 1/4 tsp cloves + 1/4 tsp allspice) 3 T WW or Buckwheat Flour Combine pumpkin, water, vanilla, milk, and egg. Add splenda. In a separate bowl, stir together flour and spices, then add to pumpkin mixture. Pour into a sprayed mini-loaf pan. Bake at 350F 30-35 minutes. Cool 10 minutes then remove from loaf pan. I made both these pumpkin recipes this morning to get rid of the canned pumpkin I had so I don't make something evil instead The muffins were good. The pumpkin loaf is cooling right now so I haven't a clue yet. I got these off the internet and then just modified them to fit my diet. |

I try not to cook with WPC due to it breaking down. If you don't really care about that then you can cook with it but personally at that point I think it's useless calories.
