Mishu's lc Bread recipe free and way Better than Atkins

Michele’s Mega Protein Bread Mix

Basic Mix



3 parts Wheat gluten (flour) ie. cups

1.5 parts low fat soy flour

.5 parts soy protein isolate or whey powder (flavored is good too for the quick breads)

Salt



Parchment Paper – a must. Buy it at superstore in the plastic wrap section. It is about 2.49 a roll. Gourmet shops sell it for 6.00.



Yeast Bread



Basic Mix and 1pk fast rising yeast for every 4 or 5 cups of the dry ingredients

Add warm water until a sticky mess results. Turn out onto a floured surface and continue to add flours and knead until a good texture is achieved. The dough should not stick to your hands but should not be dry either.



Place in an oiled bowl large enough to accommodate doubling in bulk and leave to rise in warm place covered in a damp cloth.



Line your bread pans with parchment paper. You can reuse it.



When nice and spongy and about double in bulk cut off pieces for your bread pans or buns or what have you. Leave to rise again about 1 hour covered with damp clothes.



preheat oven to 425 put bread in the oven and set timer for 10 min. Reduce oven temp to



375 – 400. Set timer for 40 min.



Midway, check to see if the tops are getting too brown. Cover with sheet of parchment paper. (It will not catch fire.)



When you knock on the loaves they should sound very hollow.











Quick Bread, muffins or pancakes



Basic mix plus

2 tbls baking powder for every 4 cups flours

2 eggs for every 4 cups flours

Liquid – water, milk, unsweetened juice or unsweetened fruit flavored drink mix or pop

Vanilla

Granulated Nutrasweet to taste

Dried fruits, nuts, and cooked fruits. Cranberries, bush berries and walnuts are apparently the best low carb, nutrient rich additions.

Fresh Cranberry compote



Mix dry ingredients. Mix wet in a separate bowl beating well. Add wet to dry and fold in fruits and nuts. The amount of liquid you add will determine if the product will be quick bread/muffin or pancakes. You can always make this batter in advance and leave in the fridge for quick meals.



Fresh Cranberry compote



2 pkgs fresh cranberries

Water or diet cranberry pop

Certo light pectin - (superstore in the aisle where the cake decorating stuff is by the deli)



Bring berries and about 1 cup liquid or more is desired, to a boil. Sprinkle half a bag of pectin on top and stir in. Allow to cool. If not thick enough for your tastes – reheat and add more pectin. It is a very good thickener.



Add some of this to fruit bread along with your dried cranberries.



The same method can be applied to the frozen berry mixes available. The addition of frozen blueberries, though expensive, is in the end cost effective, nutritious and good.

hey there michele, what's wheat gluten? Isolated gluten, or just plain white flour? thanks!
