Chicken Salsa
Taco Seasoning
Salsa FF Cheese Chicken Preheat oven to 375 degrees. Place chicken breasts in a baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all. Bake at 375 degrees F for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear. Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. |

Here's a variation:
Salsa Barbequed Chicken 1 tbs. oil t tsp. chili powder 3/4 tsp. salt 4 skinless, boneless chicken breast halves (about 1 1/4 lb. total) 1/2 cup hot, thick and chunky salsa t tbs. tomato paste t tbs. snipped fresh cilantro (optional) 1. In a small bowl, combine oil, chili powder, and salt; brush onto chicken. 2. In a blender or food processor, combine salsa and tomato paste; cover and blend or process until nearly smooth. 3. Place chicken on the grill rack directly over medium heat; grill for 12-15 minutes or until no longer pink, turning once halfway through grilling and brushin with the salsa mixturethe last 2 minutes of grilling. 4. If desired, sprinkle with cliantro. Makes 4 servings |
