Stuffed Grape Leaves

Stuffed Grape Leaves

I went to a pool party, SAT eve, and had to take a tray...

(I don't know why I think I can pull these recipes out of my A$$ sometimes)

Here's how I did it...

Brown - 3 Pounds Ground Lamb, adding 2 tbsp black pepper during cook
(I drained twice into strainer during cooking,
and one final drain after fully cooked)

After fully cooked and drained,
Then Mix in...

2 tbsp of black pepper
2 tbsp Franks Red Hot Sauce
2 tspn paprika
2 tspn Garlic Powder
2 tspn onion powder

Now...

Boil 4.5 cups (14oz) brown rice in 2tbsp olive oil

Chop 1 large bunch parsley (use only leafy ends DISCARD THICKER STEMS)

3/4 cup - SUN DRIED TOMATOES

Put - Parsley, SDT and cooked Rice through food processor
(just a few seconds for each will do)
Get it down fine, like a "Meal" = IE...(oat-"MEAL")

Throw everything into large bowl or wok...
Then mix in...

1 tbsp seasoned salt
1 tbsp cinnamon
Juice of two whole fresh lemons
(Do not use concentrate or real lemon )

...Then Black & Red pepper to taste (still mixing)

Add 1/8 - 1/4 cup of this stuffing mix onto rinsed grape leaf,
or two small leaves...

...The amount of stuffing will depend on your skill, and the size of the Leaf
(I used a full ice cream scoop as a basic measurement)...

Then roll stuffing in leaf and place on serving tray or platter


This recipe used one whole jar of leaves...
(About fifty)... (It fed a party of 20-25 people)

Thats yummy, I had that dish at a Greek restaurant...I think??,....a few years ago.

The real recipe usually calls for pinenuts, mint, and some other funky
ingredients I didn't want to try to buy


I tried to americanize and make a little more diet conscious...

I usually try to buy all organic ingredients, and better quality meats...
I think it adds to the overall appeal of whatever you cook...

When I can't take the automotive industry anymore...
I'm going to move to AZ and open up a cafe

If you have lived in Flint most of your life the summer heat of AZ would kill you. I have lived here almost 3 years now and I still cant take the summers.

I lived just south of Death Valley for over four years

One summer and I'll be climatized

Well that looks like a damn good grape leaf recipe, all americanized and healthified and all. So if I ever end up in Arizona I hope you already beat us to it and set up shop!

They were a big hit at the party, so you would probably like them as well

I like cooking healthy stuff and seeing positive reactions on peoples faces,
(Gives me a warm fuzzy)

I'll keep everyone posted on the move...
I think I'm going to try to endure one more winter here
(if I get as depressed as I was this spring, it will be the last for sure)

I had that before. Real good stuff. Had a class in Greek cuisine before and it was the best next to Italian and Chinese.

there are both Greek and Turkish versions of this dish. to the Greeks they are dolmades and to the turks they are dolma.
