1 lb Ground 99%ff Turkey
1 pkg of taco seasoning (or make your own, see aggies1ut post below)
1 pkg. Kraft FF shredded cheese
Lowfat High fibre tortilla's (tumaros are really good)
Shredded Lettuce
chopped tomato
chopped onion
chopped jalepeno's
FF sour cream
Natural salsa (Newman's Pineapple is awesome)
Bake the tortillas in the oven until crisp and break into bite size pieces. (1 tortilla per person) set aside.
Fry turkey in a frying pan and drain in a colander. You can rinse with hot water to remove any fat that's left.
While turkey is draining, fry chopped onion and jalapenos until tender. Add turkey back to pan, add 3/4 cup water and the taco seasoning. Simmer for ~5 minutes stirring occasionally.
Layer 1/2 of tortilla on a plate and cover with some FF cheese then the rest of the tortilla and cover with FF cheese. Nuke for about 1 minute until cheese is melted.
Cover chips/cheese with ground turkey mixture then shredded lettuce then tomato. Top with some FF sour cream and Salsa.
Tastes great. Very low fat and low carbs depending on which tortillas you get.
