The Peanut Butter Co. (not healthy)

Here are a few recipes from their new cookbook.
PB and J French Toast
1 can frozen grape juice concentrate
1/2 c. smooth PB
8 slices challah or brioche
4 large eggs
1/4 c. whole milk
2 tbs. unsalted butter

Makes 4 servings
1. Pour the grape juice concentrate into a small saucepan and simmer uncovered for 20 min. Stir constantly, being careful not to let the juice burn.
2. Spread about 2 tbs. of the PB on 4 slices bread. Place the other 4 slices of bread atop those covered with PB, pressing down on them lightly, and set aside.
3. In a shallow bowl, whisk together the eggs and milk. Dip both sides of each sandwich in the egg and milk mixture so that the bread is coated evenly.
4. Melt the butter in a large frying pan or skillet over medium heat. Place the sanwiches in the pan. Cook for about 2 minutes per side, or until golden brown.
5. Cut each sandwhich in half and serve with the grape syrup.

PB-Banana Pancakes with Honey Butter
For the honey butter
2 tbs. honey
1/2 stick salted butter, softened

For the Pancakes
1 1/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 1/2 c. whole milk
1 large egg
1 tbs. sugar
1/4 c. smooth PB
1 ripe banana, chopped
2-3 tbs. unsalted butter

Makes about 12 pancakes
1.To make the honey butter, combine the honey and butter in a small bowl and mix until well incorporated. Refrigerate until ready to serve.
2.To make the pancakes, in a large bowl, sift together the flour, baking powder, salt.
3.In a blender, combine the milk, eggs, sugar, PB, and banana. Pulse until smooth. Add the mixture to the dry ingredients and use a fork to mix just until the dry ingredients are well moistened; The batter may be lumpy.
4.Heat a large griddle over medium heat until a bead of water evaporates on contact. Add 1-2 tsp. of butter, and when it is melted, ladle the batter onto the griddle, using about 1/4 c. batter for each pancake. Cook until golden brown on both sides, about 2-3 minutes per sid. Continue to add 1-2 tsp. butter each time you add batter to the griddle. Remove any stray burnt bits of batter by carefully wiping the griddle with a paper towel between the pancakes. Keep the pancakes warm utnil serving by placing them on an oven-safe serving dish that's been sitting in the oven at 200 degrees F. Serve with the honey butter.

Death by PB
1/2 c. Cap'n Crunch PB Crunch Cereal
3 scoops vanilla ice cream
2 tbs. smooth PB
1/4 c. PB chips
1/4 c. Reese's Pieces
1/4 c. whipped cream
2 tbs. store bought PB dessert sauce

Make a sundae with ingredients.

PB Caramel Cheesecake
For the crust
1 1/2 c. graham cracker crumbs
3tbs. light brown sugar
2/3 stick of 1/3 c. unsalted butter, melted

For the filling
3 (8 oz.) packages cream cheese, softened
3/4 c. sour cream
1 tsp. vanilla extract
1 c. granulated sugar
3 large eggs
12 individual carmels, unwrapped
1/2 c. sweetened condensed milk
1 c. smooth PB

1. Preheat over to 325 F. Butter bottom and sides of a 9 inch springform pan.
2. To make the crust, mix the graham cracker crumbs, brown sugar, and butter in a bowl until well combined. Firmly pat the crust into the bottom of the prepared pan.
3. To make the filled, use an electric mixer to combine the cream cheese, sour cream, vanilla, and granulated sugar in a large bowl. Add the eggs, on at a time, and then gently poor the filling over the crust.
4.In a medium saucepan over low heat, combine the caramel, condensed milk, PB, and 3/4 c. of water, stirring constantly until completely melted. Drizzle the PB mixture over the cheesecake and use butter knife to marblize the top.
5. Bake on the top rack of the overn for 50-60 min., or until an inserted toothpick comes out clean. Put a pan full of water on the bottome rack of the oven during baking to help create a moist cake. Allow the cheeecake to coook for 1 hour before femoving from the pan, then refrigerate immediately.

mmmm.. PB...my weakness. may have to try the death by pb, and the pb pancakes.
