Ingredients:
3 cup old-fashioned cooking oats
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp salt
1/2 cup SPLENDA®
1/4 cup canola oil
2 egg whites
Directions:
Preheat oven to 350ºF.
In a mixing bowl, combine dry ingredients (oats, cinnamon, baking powder, salt, and Splenda®). In a separate bowl, mix together wet ingredients (canola oil and egg whites); stir wet mixture into dry mixture.
Bake for 30 minutes in preheated oven.
Variations:
After baking, can add craisins or almonds to granola mixture (serving suggestion not included in nutritional analysis).

cool recipe but it sounds a lot of oil. i buy light tasting olive oil and use it for everything even the occasional cheat day brownies. i've beem wondering how you granolaize oatmeal think i'll experiment.

I don’t have a lot of experience with cooking. So…when I read this recipe, it sounded like I would be making some sort of breakfast~oatmeal dish. I had it in my brain that it would be like the topping of an apple crisp or cobbler.![]()
I got up and started making it for breakfast for us. I’m such a dumb *ss.!!! Mine turned out to be granola bars!
One of my children crumbled it up and added rice milk…like cereal. He liked it.
Me and another child got creative. We added LOTS of berries (blackberries, blueberries, raspberries) with the berry juices…mushed it around some. Then added a tiny bit of rice dream & a scoop of protein powder.
DANG…it was actually good!

just made this recipe...
halved everything:
1.5 c oats
1/4 tsp baking powder
1/4 tsp cinnamon
1/4 tsp salt
1/8 cup oil ( I used Enova Oil instead)
1/4 cup splenda (comes out to about 35 packets!!! aargh!)
1 egg white
* ADDED: 1/2 tsp McCormick's Vanilla Butter & Nut Flavoring
baking right now... we'll see how it turns out!

Baked Oats
(This recipe yields 4 servings)
4 c. old fashioned oats
1 c. chopped apple
1/2 c. chopped walnuts
1 tsp. salt
4 c. water
1 tsp. vanilla
1/2 c. dates (optional)
Combine oats, walnuts, raisins, and salt in a bowl and mix well. In a separate container combine water and vanilla. Combine all ingredients, stirring gently. Pour into oiled 8" x 8" baking dish. Bake at 350 F for 60 minutes. Stir in dates and serve.
Cold Breakfast Oatmeal
(This recipe yields 1 serving)
3/4 cup rolled oats (non-instant and uncooked)
3/4 cup skim milk (may use rice or soy or almond milk)
1/2 teaspoon cinnamon
1 packet sweetner of choice (optional)
1/4 cup dried or fresh blueberries
The night before your breakfast, mix oats, milk, cinnamon and sweetner (if using) together in a cereal bowl. (If you are using the dried blueberries, go ahead and add these the night before also making sure they have plenty of liquid covering them.) Now cover with plastic wrap and place in the fridge overnight.
In the morning, add your fresh berries (if using) and stir gently. Enjoy.
