Turkey salsa soup
1 lb ground turkey (white meat only)
1 can black beans 2 T crushed garlic 1 jar salsa 1 quart chicken broth paprika garlic powder chipotle tabasco Brown turkey with garlic. (A little non-stick spray will help with this.) Add all other ingredients, using the spices to taste. Simmer 30 minutes. To serve, top with 2% shredded cheese (I like cheddar on this, about 1/8 C) and a dollop (4 T for the macros) of FF sour cream, both while the soup is still hot. Stir in to allow the cheese to melt. 4 large servings cals - 252 carbs - 24g fiber - 5.25g fat - 2g protein - 33g I had intended to crush up a few baked tortilla chips as well, but forgot. I never missed them. |
