Soak your chicken breasts in low fat-buttermilk (enough to cover the chicken) overnight.
Next in a Ziploc bag put about 2 cups of oatmeal; 1-2 tsp of garlic powder, onion powder, paprika, pepper, dried thyme, and salt; whatever your family likes for spices. Spray Pam on a baking sheet and place chicken on the pan and then bake for about 30-35 minutes @ 400, depending on your oven. Yum Yum ![]()

Can you substitute the buttermilk w/ something. Also, ive never cooked chicken w/ Oatmeal- is this crispy? I'm gonna try this recipe, thanks!

Yes, it turns out crispy -- almost like oven fried chicken. I actually did half buttermilk, half 2% milk. I'm also going to add some crushed crackers to my oatmeal mix.
I'm having it tonight...can't wait.

M&F has a similar recipie this month. Theirs adds a T of lemon juice (fresh) to 1/2 c buttermilk, then added the grated zest to whole wheat bread crumbs and spices. (I used whole wheat panko.) Very tasty.
