Oatmeal Cake
So ya, I stole this from another board. I haven't tried it yet, so don't blame me if it doesn't come out good.
-------------------------------------------------------------------------------- I made this but just trying some stuff out and I LOVE it!! Even non clean eaters eat it - commenting this is "a little heavy but really good." It really makes me feel like I am having a huge slice of cake mid-day! Great for breakfast too! 2 servings of 300 calories, pretty evenly split c/p 3/4 cup oats 1 cup water 1/2 cup blueberries 1/4 cup raspberries 2 large scoops (or 4 small) of white choclate (or vanilla) protein powder stevia or splenda to taste cinnamon, vanilla, and nutmeg.......... (add a 1/2 C. egg whites) Bake at 375 for 30 min!!! |

I was just thinking of cake the other day and considering making one with oats. I'll try this recipie out someday.

Also snagged from another board, but this looks good. I would substitute whole wheat flour for the kamut though and probably bake it in the oven at around 350 instead of using a crock pot.
don't know if this recipe has been posted here or not, but I got this from another web site and it is to die for.. Awesome breakfast!!! (I don't even know what it is called..LOL. Help me come up with a name?) In a large bowl mix together: 24 oz Lowfat or fat free cottage cheese 1/2 cup of unsweetened apple sauce 1/2 cup of egg whites 1 1/2 cups of spelt flour 1 1/2 cups of Old fashioned oats 2 tsp baking soda 2 tsp baking powder 2 tsp vanilla extract Cinnamon to taste Spray crock pot(generously!!) with Pam or some other kind of good oil cooking spray. Cook 2 to 2 1/2 hours on high heat.. Let cool for quite a while since it takes some time for the crock to cool off. Cut into squares and serve with sugar free maple syrup (Very portable stuff for work here..Just store in a zip-lock baggie and heat in the microwave) I had my first serving this morning..Very healthy and loaded with protien. I don't have the actual numbers though.. I will work on that... Good lord!! Was this delicious..It tasted like a super yummy french toast!!! (Fitday calculations using whole wheat flour) 1/12 of the batch= 170 calories, 3g fat, 21g carbs, 12g protien. |
