Sundried Cranberry & Lemon Tuna Salad
Okay, for starters let me say that I'm a HUGE fan of tuna.
I keep a 6-pack of canned tuna in my drawer at the office. (this gives you an idea of how much I like it) I'm always looking to try new, low fat, healthy yet flavorful ways of preparing it. I came across this and I gotta say, it is delicious on its own!Here's what you need: 4 cans of Albacore Tuna (any brand is fine) 1 small onion chopped fine 1/2 cup of sundried cranberries (make sure it says "no sugar added") 6 boiled egg whites chopped 1/2 lemon Hellman's Lite Mayo Salt (optional) Combine tuna, mayo, egg whites, onions, cranberries & salt. Mix all together, then squeeze lemon over mixture. Continue mixing then place in the fridge and let stand for about 30 min. to 1 hour. |
