Power Muffins

Power Muffins

6 egg whites
2 cups oatmeal (raw)
1/4 cup shredded carrots
1/4 cup diced tart green apples
1tsp. vanilla
1/2 tsp cinnamon
2 tsp splenda

Preheat oven to 350. Combine ingredients until well blended. Drop by 1/2 cups into a non-stick baking sheet. Bake 10 minutes or until lightly brown. This recipe makes 6-8.


I like spreading PB on it or having it plain. There a little dry when not there not warmed up in the microwave, so the PB is a nice addition.

how about putting in vanilla whey? or mixing the whey with something to thicken it and drizzling it overtop?
