Chicken and Tomato Casserole

(4 servings - 40g protein - 4g carbohydrate per serving) Ingredients 3 lb chicken (cut-up) 1/4 tsp salt 1/2 tsp pepper 2 tbsp olive oil 1 can (8 oz) whole tomatoes 1 onion (sliced) 1/2 red bell pepper (coarsely chopped) 1/2 green bell pepper (coarsely chopped) 3 green onions (thinly sliced) Preheat oven to 375 degrees. Wash chicken and pat dry with paper towel. Sprinkle salt and pepper over chicken pieces. Heat oil in a large, heavy skillet. Brown chicken on all sides (about 5 minutes). Transfer chicken to oven-proof dish. Add tomatoes with liquid, sliced onion, and peppers. Bake for 30 minutes. Remove from oven and let stand 5 minutes. Garnish with green onions before serving. |
