Here's a way to eat more, even if you don't like spinach much.
Try this: Microwave one 10-oz pkg. frozen chopped spinach per package
instructions. Drain off excess water. Prepare batter from two 5.7-oz
boxes fat-free corn muffin mix per package directions. Stir cooked
spinach into muffin batter. Divide among 12 muffin cups sprayed with
nonstick spray. Bake per package directions. Per muffin: 99 calories,
no fat.
I love spinach! I can eat the fresh stuff, but I am allergic to canned spinach. It's weird..when I eat canned spinach, the inside of my mouth breaks out in unbearable itching (I'm not kidding). I never could figure out why.

Hide the fungus though, mushrooms in particular... I had a bad experience with cream of mushroom soup when I had the flu and I have never forgiven them heh.
