Anyone has a good healthy recipe for a sweet potato pie? Most of them require lots of sugar and milk....I was thinking may be putting sweet and low and heavy cream? I don't know..w8lifter is good at things like that. Anyway, got few good recipes here:
Sweet Potato Puffs
2 lbs sweet potatoes, cooked -- mashed
1/3 cup orange juice
1 egg -- beaten
1 tablespoon grated orange peel
1/2 teaspoon ground nutmeg
1/4 cup chopped pecans
In a bowl, combine mashed sweet potatoes with orange juice, egg, peel, and nutmeg. Mix well. Spray a baking sheet with nonstick cooking spray. Spoon potato mixture onto baking sheet in 8 mounds. Sprinkle the mounds with the chopped pecans. Bake in a 375 degree F. oven for about 30 minutes, or until hot in the center.
Serves 8.
Sweet Potatoes and Onions
The Frugal Gourmet Cooks American - Jeff Smith
2 tablespoons olive oil
2 tablespoons butter(of course this one is optional)
1 large onion, peeled & sliced
1/8 teaspoon cinnamon
pinch allspice
5 medium sweet potatoes, cooked, peeled, diced, (1/3-inch cubes)
1/4 cup fresh chopped parsley
Heat a large frying pan and add the oil, butter, and onion. Saute for a few minutes until the onion is clear, then add the spices and salt and pepper [to taste]. Add the diced potatoes and saute until lightly browned. Toss with the parsley just before serving.
Serves 6 to 8.
