So is adding honey or malt/dextrose to a post workout shake good, as far as the Glycemic/insulin spike thing goes ?

Not really, no.
It's not as high on the GI as dex/malto so there's no real reason to add it.
In fact, dex/malto are pretty much top of the bill as far as the GI goes, so using them and you're all set.
The only remotely possible beneficial use for honey (besides maybe being a palatable method used to refill muscle glycogen before a show or photo shoot - someone on here did it i think) is that it's basically half glucose, half fructose. This means that you'll have the glucose replenishing the muscle stores and the fructose replenishing mostly liver stores. Once the liver is full you spill over into fat cells, upping glucose metabolism in the fat cell which boosts leptin (as well as increased insulin signalling a leptin increase).
So it may be good for refeeds if boosting leptin is your aim.
