Broiled Snapper With Herbs

Broiled Snapper With Herbs

1 1/2 tablespoons tamarind from a pliable block
1/2 cup cold water
2 small shallots
3 garlic cloves
2 teaspoons finely chopped cleaned fresh cilantro
tablespoon Asian fish sauce
1 1/2 teaspoons stevia
1/4 teaspoon salt
1/2 teaspoon vegetable oil
2- six ounce red snapper fillets with skin
2 scallions
1 medium fresh red chilies (1 to 3" long)
2 tablespoons fresh whole basil leaves or small fresh regular basil leaves

In a small bowl blend tamarind and water and let stand 10 minutes. With fingers rub tamarind to dissolve in water. Pour mixture through a sieve into a small heavy saucepan, pressing hard on solids, and discard solids.
Slice shallots thinly and mince garlic. Add shallots, garlic, cilantro roots, fish sauce, stevia, and salt to tamarind water and simmer, stirring occasionally, until slightly thickened, about 2 minutes. Keep sauce warm,covered. Sauce may be made 1 hour ahead and reheated before serving. Preheat broiler. Brush rack of a small
broiler pan with oil and on it place snapper fillets, skin sides down. Add salt to season and broil 4 to 5 inches from heat until just cooked through, 7 to 8 minutes.
While fish is broiling, slice scallions and chilies thinly and diagonally. Mix whole basil leaves into warm sauce just before serving. Move fish to a platter and pour tamarind sauce over it. Sprinkle scallions and chilies over fish and garnish with basil sprigs.

I usually come for the big city excitement.

Hi, no never been to Guelph...would love to explore more of Ontario...what do you do in Guelph...how are the people...bet more friendly than here...where you born in Guelph...I moved to Toronto 4 years ago...till getting use to the weather...its freezing today...4c in fall...ahhh

It is cold today!

Anyway, I was born in Guelph, and I'm not sure if the people are friendly here. We tend to attract T.O. commuters, being so close and all.

The only real exciting things in this city are the bars, the music, and the hockey. It does have nice architecture though, being an older city and all.

Where you originally from?

Hi a56,
my parent are from India (I never been there, would love to go), I moved to Toronto 4 years ago from London, U.K.

My first trip to Canada was to Waterloo, to visit few guys I met through backpacking in Rome, same deal music, bar, hockey...loads of fun actually...I love Toronto, but the small towns I find are more intimate and crazy....

So, other than cooking yummy food, what do you do? Do you have a job? Married/kids?

Weekend nights get pretty crazy in Guelph. Big diversity of genres and tastes right downtown.

I find Toronto to be lots of fun. I wish I could visit more often!

Kids/Married...no way I am too young for that...I am certified yoga instructor and personal trainer, I own my small freelance fitness company, rendering my services to various gyms, health clubs and private clients, nowdays apart from working I am studying nutrition.

enjoy to eat good food, but like someone esle cooking for me...lol...do you cook?? what do you do? how old are you?

Yeah. I love to cook when I have the time. I love making chili and pasta and chicken breasts plates. I'm not much of a baker though.

I'm a single dad, an artist, a supervisor, and I'm 27.

I had a good time. How was your Turkey day? Are your parents in Canada? Did you celebrate Thanksgiving?

I do most of my work through consignment (murals, requests, fashion, etc.), pretty much anything that someone is willing to pay money for.

I love to draw comics more than anything. As well as turning real people into superheroes. I am also considering the fashion business (but I think you have to be gay to do that stuff. )

I'm just a fledgeling though. Doing mostly stuff for friends and co-workers, although, a co-worker of mine is a really good artist, and we are working at starting a magazine in the vein of "Heavy Metal".

Sounds interesting...I celebrated Thanks giving, love to celebrate all occasions (from my culture too)...but instead of turkey made very lean chicken, as couldn't find a bird without stuffing at the last moment...my parents are not alive anymore....fashion...cool!! comeon you don't have to be gay in order to be in fashion...just passionate about it and ofcourse unique/creative..sounds like you have alot going on, what else do you enjoy???

Other things I like?

Well, I'm a hockey enthusiast. (I say enthusiast, cause I haven't played in over a year - suffering withdrawal... )

I like to read, eat, workout, dance , play guitar, and visit Iron Mag. I'm also a collector of stuff (some people call people like me packrats).

What about you? What else interests you?

I like to travel too. I'd also like to travel more. I haven't had the luxury of being off of this continent yet. And I also love movies and the occasional play as well.

Hi, before moving to Toronto, while studying I worked for an airline and travelled all around Europe, Far East, Middle East, Australia and U.S.
Since I have moved here, I am not travelling as much due to work, but I do make it a point to explore a new country/city every year, my favourite places I have been are Tuscany/Rome/Paris/Sevilla/Istanbul...
as far as movies are concerned, I like watching any which is unique and has a message to it...I also watch foreign movies, some of them are really good, haven't seen a play in a while but do enjoy watching one soon...

Wow! A very travelled woman! I envy you.

I like all kinds of movies, pointless or not. I really enjoy foreign movies as well. I love Showcase, Bravo, and Arts & Entertainment on TV for just that kind of thing.

Howdy,
My weekend was great. How was yours?

Animal56 (Animal=nickname based on the way I play hockey "Kinda like Animal") (56=my jersey number, as of the last few years. No significance or relevance to the number other than that.) How about your name? Any relation to Mary, Queen of Scots?

I do like cats and snakes, so I guess I am an animal lover of sorts. I love The Crocodile Hunter and the local zoos.

I don't have a pic on this site (I don't have many flattering pics that I would feel comfortable posting). How about you?

I love small stage plays. We have a stage in Guelph named, "Guelph Little Theatre", and it was my first exposure to the wondrous world of stage drama. Now we have a huge concert hall named "River Run Centre", which doesn't feature anything as enjoyable as GLT.

My goals are to compete in strong man competitions, so not really bulking or cutting, more like strength/power training.

I started off just trying to get ripped and bigger, particularly in shape, but now I've been inspired otherwise.

I started training in January (my second stint). I've always been interested in training, because of my brother who owned weights and took a course in physical fitness. But he stopped, yet, I've always been on the fringe. I went to a personal trainer about 2-3 years ago, but didn't last too long. It wasn't until my brother suggested as a New Years resolution, and a mutual promise to each other, that we join the YMCA.

I've stuck it out ever since. As for my brother...well, he goes once in a blue moon.

How about you, what's your excuse? How'd you start, what are your goals?

Hey, health living has been my passion for a while, I have my own fitness company now, personal training, teaching yoga, nutrition, nowadays learning more and more about bodybuilding nutrition, my goal is to be a healthy person, body & mind, be the best I can be, strength, energy...alll the good stuff..lol...

I agree (about the action/passion thing). I'm always going, going, going. Sometimes I make things more hectic and fast than they should be.

Anyway, I'm going to St.Jacob's Market, catching up on some of my art projects, getting together with some friends for games, and going to see a hockey game (Guelph Storm) this weekend. What are your plans?

Hey, I have been to St.Jacobs, its a fun little town, today I tried a class of HOT YOGA (I teach yoga too), but this was wonderful as its in a heated room hot as hell and you are stretching, twisting, breathing...ahhh!!! felt good...planning to move so on the look out for a place...going to a place to teach a class...hope you are having a good time..Cheers
