So I'm juicy and trying to burn body fat. I know my daily expenditure is around 2500, so I'm on a 2000 cal/day diet to create a 500 cal deficit.
Now, should I eat an extra 500-600 calories on exercise days (asuming I'm burning more calories) or should I stick to 2000 every day?

calories in > calories out = fat
calories in < calories out = loss of fat
I generally try to stick to the same thing everyday, but I don't think it would hurt to have some extra calories on work out days.

^ it's all about the average deficit.
That being said, you can try higher calories on lifting days, and lower on rest days if you like.
