Hello
I've been trying to make some protein bars but they all become a sticky/sagging mess when removed from the freezer. Does anyone know of a non-baking, low-fat ingredient that will allow the bar to remain firm after freezing.
Thanks
Jim

Jim, try coating them in a little all purpose ( plain) flour or maybe increasing the ammount of oats u use a little bit?

Use a little less liquid, to make it more like a batter or

...add or replace some of the liquid with powdered skim milk as a subsitute. You'll have to work out of the numbers to make sure you don't alter the ratios or at least take the protein into consideration.

You could grind oats into meal (flour) and use that as well to give it a little more stickiness.

What where the ingredients you used/recipe and amouts?

You could add some SF jello powder and that will harden it up. Also, things like xanthum gum or gar gum or psyllium will also thicken it up.
