Oatmeal Carrot Cake Bread

1 cup quick or old fashioned oatmeal, uncooked
1/2 cup skim milk
2-1/2 cups all purpose flour
1 cup brown sugar, firmly packed
1 Tbs. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. salt necessary
1-1/2 cups carrots, shredded
1/2 cup raisins
1 cup unsweetened crushed pineapple, undrained
4 egg whites, or 2 whole eggs
1/4 cup (your choice) oil
1 tsp. vanilla extract


Preheat oven to 350°F. Lightly spray bottom only of a 9x5 inch loaf pan with nonstick cooking spray. Combine oatmeal and milk in a bowl. Mix well and set aside. Combine flour and next 5 ingredients in another bowl and mix well. Stir in carrots and raisins. Combine reserved oatmeal mixture with pineapple (including juice), and remaining 3 ingredients. Mix well. Add to dry ingredients and mix just until dry ingredients are moistened. Pour into prepared pan. Bake 60-75 minutes, or until tester inserted in center comes out clean and crust is golden. Cool 10 minutes and remove from pan. Cool completely.

Cherry Cider Salad

2 cups apple cider or apple juice
6 ounces cherry gelatin
1 lb. canned pitted black cherries, drained, halved, syrup reserved
1/2 cup celery, thinly sliced
1/2 cup chopped walnuts
3 ounces fat-free cream cheese, softened
1 cup applesauce

Bring cider to a boil in a saucepan over medium high heat. Remove from heat and stir in gelatin until dissolved. Add enough water to reserved cherry syrup to measure 1-1/2 cups and stir into gelatin. Set aside 2 cups gelatin mixture and cool to room temperature. Chill remaining gelatin until partially set (consistency of unbeaten egg whites). Fold cherries, celery and walnuts into partially set gelatin. Pour into a mold or 9 inch baking dish. Chill until almost firm. Gradually stir reserved gelatin into softened cream cheese, beating until smooth. Add applesauce and mix thoroughly. Spoon cream cheese mixture over cherry layer in mold. Chill until firm. Unmold onto a platter.

Apple Oatmeal Crisp

4 lbs. Jonathan or Granny Smith apples, peeled, cored and thinly sliced
1 cup sugar
1/3 cup raisins, optional
1-1/2 tsp. ground cinnamon
nonstick cooking spray
2/3 cup all purpose flour
2/3 cup brown sugar
1/2 tsp. ground ginger
1 cup old fashioned oatmeal
1/4 cup plus 2 Tbs. unsalted butter, chilled and cut into small pieces

Preheat oven to 375°F. Combine apples, sugar, raisins, and half the cinnamon in a large mixing bowl. Mix thoroughly. Transfer to a 9x13 inch baking dish coated with nonstick cooking spray. Set aside. Combine remaining cinnamon, flour, brown sugar and ginger in a food processor or another bowl. Mix thoroughly. Add oatmeal and butter and cut in butter until mixture resembles coarse meal. Sprinkle evenly over apple mixture to cover. Bake 50-55 minutes until mixture is bubbly and top is browned.
