DP What's Your View on Roti?

Roti can be made hundreds of ways, but most recently the East Indian women I've trained or met make it the following way:
w/w flour
water
salt
baked on a hot stone or griddle
I would instead subsitute either: (your input please DP)
buckwheat - this flour makes fabulous muffins, pancakes etc. it is just awesome to bake with
spelt
quinoa
amaranth
kamut
tell me what is good to use
water of course 
sea salt
baking stone
There is an MLM company just like Tupperware, USANA, Cell-Tech etc. that sells baking stones (flat). I've never used one but heard they're great. They cost about $200.00
Of course to this roti you can add chopped sirloin, chicken breast, tuna, seafood for protein. And any amount of veggies or carbs, plus flax or olive oil.
Also you could make a yummi rolled protein crepe w/ your fave protein powder and strawberries and cream or something.

Since I love to bake and am always thinking about endless possiblities I just thought about adding crushed flax seeds to the flour mix. Come on work with me!!!
