DP!? Currentlly Premade, Just Need to Bake

Alright I have a huge 5lb (used to be PVL whey gold) tub of a flour/grain mixture. I made it a couple months ago, but I haven't had time to bake lately but tell me if it's OK.
Organic:
whole wheat
quinoa
amaranth
cornmeal
dark rye
light rye
cracked wheat/rye/flax
Bob's 7 grains: flax, tritical, flax, bran, and I can't remember the rest
cinammon
nutmeg
sea salt
baking powder
In the freezer I have these leftover pureed ingredients from making homemade juices:
grapefruit, orange, lemon
apple, pear, lime, red grapes
I'd love to use this up to make muffins or loaves and I always add raisins to sweeter things.
In sweetening if I have to I use raw cane sugar, maple syrup, honey. I haven't tried stevia yet but will try it.

Flours and sugars are not going to help you achieve the goal of Leaness by Christmas!
