i buy and eat my veggies fresh. i figure frozen would be 2nd best and canned probably worst....but for green beans the canned seems so incredibly convenient.
are canned veggies ok to eat? w8? probably less vitamins etc but still an ok way to get veggies?

They're so overcooked that the food quality is low....i.e. all the vitamins are gone.

w8...I have heard quite the opposite....canned vgies are cooked in such a way to preserve much of the vitamins. Not sure where I got this from but it stands out. The major disadvantage is the sodium so make sure you rinse them off well. Personally I find them VERY convenient...and convenience=adherence so if that's your style...go for it...just my opinion.

ok but....canned veggies sit in water forever.....have you ever heard of the suggestion to cook frozen veggies in as little water as possible, and to cook them for as little time as needed? This is because all the good stuff leeches out into the water.
How much do you think leeches out into canned veggies when they've been sitting in that water for god knows how long? I'd think there's more vitamins in the water than in the veggies.
Convenient yes, best option no.

Drinking the jiuce may give you the vitamins but the water if loaded with sofium!
Personally I think it comes down to convenience..if you don't have the time to cook fresh veggies...canned vegies are MUCH better than no veggies. It's all about your lifestyle and making the healthiest choices you can given your lifestyle.

Thanks Fit Freak. You said what I was trying to verify in my question. I buy fresh veggies and have them all the time. But this week it just wasn't going to happen....so I was wondering if green beans from a can would be ok (as in - doing no harm).
I know they aren't as good and the vitamin content is shot and all that....but was deciding if they were better than nothing.
It's not part of my normal eating plan - just a back up for when I get in a jam.
