As Funky said, You don't have to have eggs. There's plenty of times I've had left over chicken for breakfast

it's still carbs isn't it?
Its very high on the GI. You can vary your carbs but you should stick with slower burning carbs.

| I do not agree with 2400 calories for cutting, from your height and weight there is no way you have enough muscle to do any significant cutting at 2400 calories a day. (and thats not a knock either, just a fact. Many lifters I am associated with who are appreciably larger in stature than 200 lbs (250-290 lb guys) cut at 2100-2200 calories. |
