6 cups sliced mushrooms
1 teaspoon olive oil
4 ounces of chopped spinach
2 green onions, sliced
2 cloves garlic, minced
1/2 cup white wine
1/2 cup nonfat evaporated milk
1 pound cooked shrimp
6 cups cooked pasta (approx. 3 cups uncooked)
2 tablespoons Parmesan cheese
Salt and pepper to taste
In a large nonstick skillet, heat olive oil over medium heat until hot. Sauté the sliced mushrooms until soft. Add the spinach, green onions and garlic and cook for 5 minutes. Reduce heat, add the white wine and evaporated milk and heat through without boiling. Pour the sauce over the cooked pasta and top with shrimp and Parmesan cheese.
