Autumn Chicken

Autumn Chicken

4 boneless skinless chicken breasts (16 ounces total)
1/4 cup flour
1 tablespoons olive oil
3 pears, cored and cut into wedges (do not peel)
3 green onions, sliced
1 teaspoon minced garlic
1 cup apple juice
1/2 cup dried cranberries
1 teaspoon dried thyme

Place the flour in a shallow dish and salt and pepper to taste. Lightly dredge chicken in the flour and set aside. Spray a nonstick skillet with cooking spray and heat over medium-high heat until hot. Add the chicken breasts and cook about 2 minutes on each side or until browned. Reduce heat and continue cooking for 5-6 minutes per side or until no longer pink in the center. Remove chicken from skillet and keep warm.

Add the olive oil to the nonstick skillet and heat over medium heat. Add the pears, green onion and garlic and cook for about 2 minutes or until pears are slightly tender. Reduce the heat to medium and add the remaining ingredients and simmer uncovered until slightly thickened. Spoon pear mixture over chicken breasts and serve.

Makes 4 Servings
Serving Size: 1 breast and 1/4 of the pear mixture

Cholesterol: 66 mg
Sodium: 78 mg
Carbohydrate: 34 grams (46% of calories)

Winter Chicken

4 boneless skinless chicken breast
4 cups snow

Bake chicken.

Take the snow and make mini snow-men. Put each snowman on a plate along with chicken and it is perfect in season meal!

I tried it. Was good, but a bit sweet without some brown rice to tone it down but good stuff.

I think any combination of warm spices would work, for example the pumpkin spice mix they sell at stores. Sure most people use them for pies, but there's no reason to limit it for that.

If you want to do it yourself though,
1 tablespoon of pumpkin spice mix =
1 t cinnamon
1 t allspice
3/4 t ginger
1/4 t nutmeg

plus a small tip for a really crispy chicken skin:
12 to 24 hours before stuffing and cooking the ckicken, rub the skin with a mixture of salt and baking soda, then chill until cooking.

The baking soda does the chemistry thing by crisping the skin.
