Over cooking???

Ok so I normally buy a bunch of yams wash em up and wrap them in aluminum foil. I bake them all till just before they are totaly cooked then throw them in the freezer. When ever I need some I grab out the amount and nuke em. Will this over cook them to the point of I am no longer getting the nutrients out of it and stuff? Its not like they are burnt or anything just mooshy from being frozen and re heated but its sorta like mashed potatoes. You think this is OK to keep doing?

Cooking food alone takes nutrients out. I wouldn't worry about it. Do whatever works for you. If it helps you stay on a healthy diet then by all means do it

You can always just take 10 mins. and cook them in the micro as you need them too. However they do not taste as good as baked.
