If a person is getting 25-30g protein throughout 6 meals a day, what would too few calories do? Let's assume with these protein levels that someone was only getting 1200 cals, yet at 10-15cals per lb in body weight, they should be somewhere around 2000 or more.

If you drop the calories too far too fast, you go into starvation mode. First thing the body will do in starvation mode, is dump muscle - because it does nothing but sit there and burn calories.
So if you are starving, the body tries to help you by extending what energy stores you do have, your fat, it will only break into fat stores if it has to. It is easier to break down muscle and it costs less in terms of caloric expenditure, since you must spend energy to get energy from your fat or muscle stores, so getting rid of muscle is a double bonus to the starving human. Normally when you are dieting down, you would take in even more protein than normally.

When you get too low, your body will start storing fat and quit burning it!
