cooked tuna???? Protein Loss.

When making tuna patties do you loose any protein or nutrients from the cooking phase? How can I keep the patties from falling apart without adding any carbs.
I tried white albacore with diced onions, diced celery, and one egg white and they still fell apart.

Canned tuna is already cooked so I wouldn't worry about it.
Ground up oats.

The white doesn't really hold it together, I'd suggest using the yolks, and if you don't want to add carbs, then maybe throw in some wheat bran or some flax seed meal to get the gummy, sticky texture with the yolk.

cooking any protein denatures it, you do not really "lose" any protein.

tuna is decent, but i have completely eliminated it from my diet because of the high mercury risk !!!!!
