Diet?!!! Eek!!!

Okay guys, I am hoping I can get some help with this one...
I am totally in need of a lifestyle change so I have started working out again after a long "hibernation." I used to be an athlete quite a few years ago(track) and was totally lean-all muscle and no body fat. Though I have stayed active through the years, primarily through my career as a dancer, I never once exercized or did any heavy lifting like I did when I was in school...I have put on a little poundage
I think because now I do not dance as much as I used too. Not too long ago I realized that I needed to change my habits and get myself back into the shape that I was in 5 years ago, It was definately not hard to get back into the swing of things...but my only problem is DIET!!!!
I am not fat by any means, I am 5'7 and 130 but I wouldn't mind slimming the little bit of fat I do have to show off my muscles that are hiding behind it.
(as I am building them up) My problem is that I really do not want to take a "fatburner pill" it is hard enough to take medicine when I am sick! If they made one that would make me feel "normal" then I would consider taking one. So the only alternative is to improve my diet.
I know I'm supposed to lay off the carbs...and its hard to do, but I'm trying...My question is how much am I supposed to eat??!! I have a high metabolism, I can eat and an hour later I am hungry again!! I am trying to eat a LOT of fruits and vegetables. But I am not sure what I am supposed to eat and HOW MUCH because I want to build muscle AND loose fat! Any info and insight would be greatly appreciated. Thanks, A

Fat burninf pills are scams.You have to eat cleaner ,better food choices.Center your diet around
Skinless chicken breasts
Lean beef
egg wites
tuna
fish
turkey breasts
skim milk
cottage cheese
veggies/salads
potatoes
yams
brown rice
oatmeal
fruit
water
