warm apple pudding

1 medium granny smith apple (peeled, cored and thinly sliced)
1 tsp lemon juice
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup low-fat ricotta cheese
1/2 cup 1% cottage cheese
Splenda or another sweetener if desired
2 Tbsp "No Sugar Added" syrup (like E.D. Smith)

1. Warm a small pot over medium heat. Spray with nonstick cooking spray. Add the sliced apples, lemon juice and spices. Let stew until apples soften (approximately 7 minutes).

2. Add both the cheeses and warm to heat through. Add sweetener if desired, and mix to incorporate. Serve in a bowl and top with the syrup.
Tip: Feel free to use more or less spice, or different spices like allspice, cloves or ginger.
