After introducing myself, I got the advice of posting my diet, so for today, this is what I've had today.
7:15 - 1L of water and Quaker Oats
10:00 - Apple
13:00 - Grilled Turkey with brocolli
16:00 - Rest of 13:00's Lunch
I'll probably have something later on, but unsure what..
The thing is that I don't feel that hungry till about 7ish (sometimes later).
I have a limited budget, so what sort of snacks, meals would you advise.
After consideration, I feel that I want to build muscle mass.

That was just for today, but I'm due to go shopping tomorrow morning, and plan to get tons of tuna,meat,veg and more meat.. Today was a very wierd day in terms of eatting...it was either that, or doughnuts,cookies,etc (Someone's leaving gifts).

This guy needs like a 50-30-20 diet. 50 % of cals shoudl come form protein, 30 from carbs, and 30 from fat. AN apple is not a sufficient mid morning snack. And a little oatmeal with a shitload of water is definitely not an adequate breakfast. You should put your trust in the poepole on this sight to help you out. I don't mean for this to sound patronizing and/ or critical...!
P.S. doughtnuts and cookies are good, but not as a substitue for "real" food, and only have them in moderation rather than an out of control binge.

Being American, I have no idea what your weight is, how does that translate into kilograms, pounds? We assume you want to be ripped?
You're 6'0" with some fat? How much? Tall and skinny?
Eat until you feel like you're full all the time. That's a good start.
Read Read Read. Be patient. You're young. Lots of guys don't fill out until late 20s-30s.
Train, Eat, Eat, Eat, rest. Repeat.
Donuts and cookies.... sounds like a variation of a Mudge diet!

Ripped would be nice, but not to the point where you can see every single muscle in my body. I'm taking up kickboxing, so I want to work on things like
Flexibility
High strength
Sounds wierd but I want a solid body

Today's menu
Breakfast - Oatmeal, Scrambled eggs with tuna, Green tea and then a banana on the way to work.
Midmorning - natural yoghurt with whey protein mixed in & a multivitamin.
Lunch - Sliced cooked turkey mixed with broccolli & spinach
Afternoon - Some more of lunch
Dinner - Grilled Steak with grilled mushrooms with lashings of hot sauce

I'd recommend you diet down, then build mass......................
make your meals a day a head of time, so when you're running behind in the morning, you won't have the excuse of cheating the day you DON'T make your food because, you didn't have time to make it. Being organized is also a necessity when dieting.
