Does anyone know off hand if the gi rating is different in reg corn or those little baby corns in a can? Are baby corns in the can any good for you?

The baby corn would be higher in sodium for sure... don't know if there's any resource that would have the sugar content split out of the carbs. One would suspect the sugars would be slightly lower, simply because with the baby corn you're also eating the fibrous, if immature, cob portion.

However, fresh or frozen corn, GI be damned, likely has more nutrients in it.

Corn is a grain and its a medium gi food.
