Low-Fat Oatmeal Cookies

1/2c splenda
3/4 cup applesauce
1 cup ww flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup rolled oats
1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)

-Preheat oven to 350 degrees F ( 175 degrees C ).
-Grease a cookie sheet. 2 In a medium bowl, stir together the splenda, and applesauce.
-Sift together the flour, baking powder, salt, and cinnamon; stir into the applesauce mixture.
-Add the rolled oats, raisins and chopped nuts (if desired); stir until combined.
- Drop by rounded teaspoonfuls onto the prepared cookie sheet. Bake for 10 minutes in the preheated oven.
-Allow cookies to cool slightly before removing from the baking sheet.

heres another varitation!!

PB oatmeal cookies
1/2c splenda
1/4 cup applesauce
1/2c peanut butter
1 cup ww flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup rolled oats

per cookie(makes 24)
62 calories
3g fat
7.2g carbs
1.2g fiber
2.5g protein

if you add 1/2c. raisins:
71 calories
3g fat
9.5g carbs
1.4g fiber
2.7g protein

Hey Jen- I tried these last night-- except I added 2 eggs. Oh I also added vanilla.

Ohhh and my hubby likes them too--soooo thats a great thing. Getting him to eat healthier food is always a plus.

They ARE SOOO MOIST TOO--OMG!! YUM

Try the muffins ID-they are hard to eat only 1, but atleast they are super good for you. You could eat the whole batch on your high carb day. I just wanna eat the whole batch any day! Check out how i changed the recipe a bit.

I think this is the first time I ever cooked anything, and it turned out great. These cookies rule! Nice and healthy to, only question is with those raisons am I getting a lot of the sugar I try o so hard to avoid?

You can leave the raisins Out!! I did, and they still taste Awesome!

just get the unsweetened sundried raisins! no sugar added just dried grapes! not bad for you at all!!

I tried making them, but they were too dry. It's like I didn't add enough eggs or water or something...?

hmmmmm I think that would work! consistancy might be a lil diff but its worth a shot!

Ive made something similar with oats, pp, and egg whites, they were VERY dry. I guess the apple sauce would help keep it moist.

I made these oatmeal cookies Monday night Yum!! Love them.. But I don't add in nuts or raisins... and I used 1/2c applesauce--and half cup of whole wheat!
