3 cups whole wheat flour
1 teaspoon salt (or to taste)
1 1/2 cups warm water
Mix the flour and salt in a bowl. Add the water and mix into a nice dough. Knead until soft and elastic.
At this point, you can let the dough rest for an hour or so, but it isn't really neccessary. Pinch off a chunk of dough, roll into a smooth ball (golf-ball size) with your hands, then flatten on a floured surface. With a rolling pin, roll into a thin circle. Be generous with the flour to avoid sticking.
Cook on a medium hot griddle until delicately beige and specked with brown. It may take some practice to get the griddle the right temperature. You don't have to use any oil on the griddle, just cooking spray.

Some I've tried (like this one) some I have not. I pull them off the internet and modify them once I've tried them.

Have you ever tried La Tortilla (http://www.latortillafactory.com/)? According to their label they only have 11 carbs, 8 of which is fiber. They actually don't taste too bad. I like to make egg white breakfast burritos with them.

Yeah but each one of those tiny wraps is 2G Fat and at only 11G Carbs I can eat a buttload of them on low or high carb day. Then I would be getting a hell of a lot of fat that I don't want.

Jodi, I tried and they turned out great for dipping into my homemade salsa but is there anyway they can be made like soft tortillas? Thanx for your wealth of healthy recipes
